Flo’s Grill & Kitchen’s Ayamase, also known as Green Sauce or Ofada Green, is a fiery, aromatic Nigerian pepper sauce made from unripe green peppers, green Scotch bonnet, locust beans (iru), assorted meats, and palm oil. Unlike conventional red tomato sauces, Ayamase uses exclusively green peppers for a distinctive colour and intense, herbaceous heat with rich, savoury depth. A signature of Yoruba Nigerian cuisine, it’s traditionally paired with local Ofada rice but works beautifully with white rice or any swallow.
